Issue

We are a 16th Century Coaching inn based in Hertfordshire with busy Sunday lunches which mainly attract families and large parties but we struggled to sell through desserts at the end of a meal.

We advertised using a chalk board which we took to the tables for flexibility but we didn't particularly advertise what we had or draw attention to it.

We sold 15 desserts per week on average and our best selling dessert was Blackberry and Apple Crumble.

The Solution

We started advertising that we were using Dairy True Taste Ice Cream and sorbets from Carte d'Or on our chalk board and using Carte D'Or branded glassware to present our desserts.

We also put up posters, showboards, umbrellas and A-boards to advertise that we are serving Carte D'Or ice cream and staff wear Carte D'Or T-shirts.

The Results

The reaction from customers has been brilliant - they are all really enjoying the wider range and variety of desserts on offer and the feedback on the ice cream in particular has been very positive.

The branded glassware is really impactful and delivers the WOW factor at the end of a meal.

You often find once you have taken out one dessert that looks fantastic other customers see it and want one too!

We are now selling on average 30 desserts per week and have increased our margin by 28% per dessert which means an increase in revenue of approx £330 per month just on desserts. Our ice cream desserts are by far the most popular choice for adults and kids alike.

Plus when people stay longer for a dessert they often have an extra drink or coffee!
